This air-dried Spanish-style chorizo from French charcutiers Maison Duculty delivers deep paprika, garlic, and smoked pork flavors. The texture is firm, dense, and slightly crumbly with visible marbled fat and a rusty red hue from pimentón. Each slice offers slow-release heat—warm but not fiery—with sweet, smoky undertones and a savory, umami finish.
Maison Duculty, based in Lyon since 1932, crafts this chorizo using pork from free-range French farms. The meat is coarsely ground, mixed with Spanish smoked paprika and garlic, then stuffed into natural casings and dry-aged for 4–6 weeks. Unlike industrial versions, no nitrates or artificial colors. A traditional saucisson sec with a Spanish soul.
Pair with Manzanilla sherry, dry rosé, or light Tempranillo. Serve at room temperature with cornichons, olives, or pickled peppers. Also try on rustic bread with piquillo spread, in tortilla española, or shaved over ensalada mixta. A perfect picnic star or charcuterie board essential—sliced thin or chunked for snacking.
