Made by Maison Paccard in Savoie, this is a farmhouse tomme from raw milk of Abondance cows grazing high pastures. Aged for months, it develops a thick grey rind and a terroir-driven soul. A true expression of mountain tradition, passed down through generations.
Pair with a juicy red like Mondeuse or a fruity Gamay. Perfect with crusty bread, dried sausage, or pickled walnuts. Serve on a cheese board alongside quince paste. Also grate into potato gratin or melt over buckwheat crepes for a taste of the French Alps.
