Crafted in the scenic Taleggio Valley of Lombardy by the Arrigoni family, Casarrigoni Roccolino al Tartufo is a distinguished Lombardian specialty shaped in homage to the region’s historic stone bird-watching towers, the roccoli. Handcrafted according to a cherished family recipe, this small-format artisanal cheese features a distinctive cylindrical shape encased in a rustic, natural brown rind.
Beneath its textured exterior lies a dense, compact, and pleasantly crumbly paste liberally infused with aromatic black summer truffle. On the palate, the mild, milky sweetness of the young cow’s milk cheese creates a striking contrast with the deep, aromatic woodiness of the truffle, delivering a complex interplay of fresh dairy tang and rich, earthy forest floor notes.
